Pretty easy to make a stuffed shell dish without meat, cook the pasta shells and stuff with ricotta, mozzerala, red sauce and broccoli, then bake the whole thing, I had a recipe somewhere, but I bet the internet has a few. Real good tasting and plenty of leftovers to get you a couple meals.
Eating healthy really does do wonders for your body, I gave up pop and started eating a lot of vegetables last year after my broken leg and I felt better, lost weight, my 6 Tums a day heartburn went to a couple Tums a month.
