Hello from another '79 Minerva owner.

You should have no problem getting to your HP goal with the plan you've laid out. I'm not sure I'd have the case shuffle pinned. I don't know that's really necessary except in the big HP builds. I'd suggest using RSR rocker shaft seals...a little extra oil leak protection. At 80k, I'd guess there's a good chance your P&Cs don't measure to spec. If they need replacing, you can bump displacement and compression ratio a bit.
