I used the original material as a rough-template, leaving a little extra on the new piece, and then glued the new "leather" to the face of the dash...then trimmed to fit, cutting as necessary to insure good fit, no wrinkles. And then cut-out the gauge and switch holes with Xacto.
I used Alcantara, a very forgiving and easy-to-work with material.
