I'm not patient enough for that! I think my mental limit would be about 1 week....
The popularity of some restaurants (especially the newly opened ones) is not necessarily based on the quality of food but because they are simply the new spot to be seen in.
Now if a restaurant has been open for a year or more and it still needs a booking a month in advance then that is probably a reflection on the food and chef
