Can I install 81mm, 2.0L Pistons and cylinders with Compression ratio is 9.5:1 with the 66mm crank on my stock 911t 2.0? Do I need to change the crank? Camshaft...i don't know what to do. My old pistons/ cylinders have broken parts.

Your engine is a SS 2.0, 80x66 mm crank. Yes, 81mm and higher compression would be a nice upgrade. But keep an ear out for pinging, you might need to run better gas.

So I don;t need to change the crank on my 911t 2.0? Is 91 octain gas ok?

Be aware , a 9.5 to 1 CR may be too much with T cams . What will the dynamic or actual CR be as opposed to the theoretical ?
