I used an Escrow service when I bought my Lotus from update New York to Colorado. Basically you and the seller setup accounts via the service. You deposit the cash into the escrow and he/she gets notified the money is there. In my case I held it in escrow until the seller called me, texted pics of the car loaded on the shipping trailer with photos of the signed title documents, and I talked to the transport driver...then I released funds to him.
This is the one I used, it went very smoothly. On a $30K purchase the fee was about $200 IIRC.
