There is so much oil in a 911, that I doubt this would ever be an issue, unless you sprung a pretty fair leak. You drive the car until hot, and if you park and check your oil at the end of every drive, you should always have oil. But you check it every time.
If you find that your car runs hot oil temps, many SC owners upgrade to a Carrera oil cooler and fan, or some other kind of cooler that is more of a radiator than the trombone cooler that SCs came with. This would be your best protection from overheating, IMO.
Putting in a wideband sensor would probably be your easiest method of monitoring lean running conditions, but I thought that cars tended to run rich at altitude. OTOH, what do I know ?
