i just got under 2600lbs on my m491. iroc type bumpers, no ac etc... unlike you i have a sunroof roughly 35-40lbs more. i think i will happy if i can dip below 2450lbs.

It's pretty much delete everything and is currently at 2396# w/ 5 gallons of gas.
The car was auto-crossed monthly, with a few track days thrown in, until a couple of years ago. Now it's streets and canyons only. I plan on a fiberglass front bumper in the near future so maybe 30# less yhere. And, maybe, a plastic rear windscreen for 12# off.
