It depends on what you intend to do with the car.

If you want a stock car and want it to be original in appearance and it will be a weekend cruiser, leave them stock.

If your torsion bars still have the original paint and if they are rust free, they will be fine to reuse.

If you are planning on generally upgrading the car's performance or making a hot rod then, yes you want to upgrade the torsion bars.

Lots of opinions about sizes here.
