Great write-up, just finished reassembly and the clutch pedal engagement point is high on the pedal, so high that it will not fully engage, I'm confident that the clutch fork was placed back to the correct position when I replaced the throw-out bearing, however I think I may have let air into the slave cylinder, could this be the cause of the high engagement point?
The clutch/flywheel kit I used is a stage 2 so I would think my new engagement point would be lower than before. Thank you.

Air would cause a low pedal. High is due to the travel not being sufficient. Check if the slave cylinder is seated correctly.
