How do I cook green beans?
 
Hi Guys,

I’m in St. Paul MN and last weekend I had the best green beans in my life at Mancini’s Char House.

They appeared to be grilled and with a very light sauce.

My comment to the waitress was that kids would eat these, that’s how good they were!

So coming to OT where the cooking knowledge is top notch.

Suggestions/recipes to try in a home kitchen- coming on winter and I don’t have a grill. Stove, oven and microwave I do have.

I like to mix cooking veggie up a little. Try roasting. A little EVOO, salt, pepper etc.

If frozen, I heat them up in water, drain when they get to the doneness/crispness & want, heat a bit more, add a little sesame oil, sprinkle with toasted sesame seeds before serving. I also like them with almonds. Sometimes I cook them with shallot oil & add some green onions.

We boil them for 1.5 minutes immediately followed by an ice bath.
Then for finishing, either in a pan or grill until hot. Usually during the week it’s the former, with butter and chopped almonds, sea salt to taste. The kids devour them.

Boil 5-10 min from frozen so they still have a little snap, mix in sauce and spice, cook on higher heat to congeal sauce and burn a little if desired. Use wok or oven.

Yesterday I made a package of chicken/mushroom/gb but just added more ginger/garlic/soy/mushroom/gb/sesame oil to turn it into several meals.
Same ingredients and it extends the recipe.

That is a good question- I don’t do much real cooking; salads, vegetables, frozen meals and sandwiches. Occasionally build a pizza or make pasta. Doctor told me to cut back on saturated fats and sweets, so my chocolate and string cheese diet has taken a major hit!

I buy the fresh green beans and blanch them for a few minutes and then into an ice bath. Heat up a skillet, add some olive oil and stir fry them with some salt, chopped garlic and add some red pepper flakes at the end.

Light steam with some chopped garlic, cashew halves and coarse sea-salt. Drizzle a little olive oil over them.

My buddy's grandmother sautéed them with pancake batter breading. Little odd. Very good.

Substitutions for the pot are allowed...but not for the bacon!

Grocery day tomorrow, I’ll have to see if they have fresh beans- winter is coming on up here, so might be more difficult to find.

I’ll pick up some olive oil to cook them in- even though they look grilled, they have to be done in a pan- be pretty hard to keep them from falling into the fire!

Using a solar powered setup would be about as green as you could get.
