Love me some pimento cheese dip. Though I would call it closer to crack than caviar.

I like it. Never thought of making it myself. That recipe looks good. Do you think it would be OK to substitute Velveeta?

In the Low Country of South Carolina / GA a red jalapeño would replace half of the pimentos.
The marscapone is a brilliant change up. Thank you for posting, just placed on the docket for this weekend.

I'm gonna pass this along to my wife who is affectionately known as "Leah Dipmaker". Weird last name I know... but it works and it's appropriate. She makes all kinds of dips.

Typically a cheddar is used and it is grated and the ingredients are mixed with a (wooden) spoon. The Leicester should crumble with a fork.

That looks like a great recipe, thanks for posting! I see stuffing some jalapenos with it and deep frying them in my future.

From the same specialty import deli as the Mascarpone?
I never heard of either. Those southern boyz must sip their can 'o Coors with a pinky extended.

We used to eat them all the time. Mom made with Velveta and pimientos. Yum. I eat the cheddar but the Velveta is better.

OK....Biscuitville is teasing me with Jalapeno Pimento Cheese...4 types...but that just doesn't appeal to me on top of a chicken biscuit, etc.

Or...if you can't find the ingredients, the store made stuff is good also.

There is only one brand I like here...Stan's...or the store deli sections. The others just ain't "right" for my tastes...but strictly personal preference.

My mom used to make it often when I was young, but then stopped at some point. I've had it once or twice in the last 10 years out of curiosity. It's good, because it's hard to go wrong when cheese is involved.
