The factory Weber thermometer in the lid is pretty damn accurate.

I’m testing it against several probes.

Thus is smelling good, but I can’t help feeling like I’m playing a game of “standing rib roast CHICKEN’. It’s a total crapshoot when I hit temp. Dinner is on the table at two. Fingers crossed! It’s gonna be a nail-biter.

You know what? I’d say it’s better in an oven! The smoke is almost distracting. I cooked on the rare side so I had to do the hot Jus dip before I plated. :(

I’m eating salad for the whole rest of week.

What did you use for smoke? I used Cherry which gives a nice smoke flavor. Hickory is overwhelming to me. Mesquite is about the maximum I go for "smoke" flavor.

is the bomb. Its wifi-I can go ride my bike and monitor my smoker temp. 4 channels. 100 bucks. Often under 75 on ebay.

Imagine what you have, 4 channels and Wi-Fi, with wireless probes.
