good bakeware?

The wife loves baking. I like the results of her baking.

I want to get her new cookie sheets and cake pans.

Is Airbake still the thing? (it was 20 years ago last time I did this for her)

What does the hive mind suggest?

USA pans are great - 100% steel. combine with the silpat mat and you have an ideal medium for baking cookies.

For cake pans, Williams Sonoma Goldtouch are great.

Get some 1/2-1/4-1/8 sized sheet pans, and some silpats..

Some glass corning casserole pans

We do the plain aluminum Vollrath brand sheet pans from Webstaurant and use silpats or parchment paper. Cheap enough to buy in bulk - they're super handy in the workshop or for kid art projects and without a coating you can put them on the grill or in the broiler and hack at them with metal utensils with no fear. Stick with one brand though - the sizes are almost uniform but I have some off brand 1/4s that won't nest with the Vollrath ones.

Same place is a great spot for "restaurant-style" nonstick pans. Abuse them and replace them every 2-3 years.
