What a miscreant you are.
First grits at maybe 11 made in Toledo by buddies grandmother from South Carolina. All of her kids shared grandma maybe six months per year on rotation. They were a shock first bite, then she hinted to put some butter and jelly on them. Now I get them visiting my paps in Charlotte when we go to breakfast but I bet I've never had good grits.

My wife orders grits from two suppliers in South Carolina...both make a killer shrimp & grits dish. They should be stored in the freezer to keep them fresh.

The first grits I ever had was in 1963 when four of us were driving from Delaware to Daytona Florida for the 500 mile race. We drove all night and stopped in southern Georgia and we all ordered bacon, eggs and toast. There was this white stuff on the plate and my buddy Lee said out loud "what is this stuff" and I remember the waitress coming over and saying something like "ain't you boys ever had grits before?" Everyone in the dinner stared at us the rest of the time we were in there! Still have um now and then.

How you prepare them all depends on how your going to eat them- breakfast, sweet, savory, cheesey etc. Also, only white grits for breakfast. Yellow grits would be more dinnerish. You're bordering on Polenta at that point. Then you introduce cooking them with broth instead of water. Which reminds me, breakfast grits I always use 50% milk 50% water. Much more creamy. Cook for 20 min at a low simmer. Then turn the heat off and let them sit for 10-15 min with the top on. Then they're done. And never, never instant. Its like comparing Nescafe with fresh ground beans.

I like instant grits for breakfast. Cover them with a lot of salt, pepper and butter with scrambled eggs. Don't actually mix them, but scoop up some eggs with each forkful of grits. Bacon on the side. Maybe toast. Parents liked grits with over easy eggs or red eye gravy. When I was a kid, they had kids put sugar on them. I did not like them that way...and only started enjoying them as an adult.

I ate grits a little bit when I was in the Army. Never did develop much of a taste for them.
But S.O.S.? Heck yeah, I could eat it every day for breakfast with 2 eggs with runny yolks.

Grits for breakfast. White grits, butter and pepperjack cheese. Served in a bowl with a load of cooked crumbled sausage on top. Could eat them everyday, but not according to my Doc.

Grits every morning. Just 10oz with a banana cut up and 3 eggs. That’s my only grain for the day. Lost 65lbs this year. Lunch and dinner is mostly veggies and a little protein.
A beer or some wine every once in a while. Got to enjoy life. |

Long ago when the world was still black and white I was a kid in the boy scouts at summer camp at Camp Tuckabatchee in Alabama the served grits most mornings. I ate them with a large pat of butter and sugar on them. As I was just finishing adding the sugar the camp counselor walked by and said in an angry voice. "you are going to eat that!" and I looked at him and said yes sir, I planned to. And proceeded to snarf them down. He was a Yankee from up north and had never seen anything like it.
I skip the sugar now, just some butter. They are not real common in Oklahoma, but not unheard of.

I lived in AL for a year and couldn't get hash browns to save my life in the smaller towns. It was grits or nothin'. Nothin' won out.
I wonder if some of those good ol' boys had a nice plate of HB's with a bit of salt and butter if they'd convert. Not likely. |
