Induction VS Gas
 
I need to replace the stove/cook top in our kitchen. A melted pan has destroyed the current one. a Wolf gas range. Wolf has 30" Gas and induction like always, the induction being more expensive.

The wife wants induction because of a cooking class she attended pre-pandemic, I've always preferred gas. What are you guys installing these days?

Gas is infinitely adjustable. I wish I had gas. GF did a Miele gas cooktop in her rental - very nice.

We had gas went to induction, way easier to clean and as adjustable as gas, in reality more powerful than gas.

I had induction and got rid of it, hated not being able to use aluminum or copper cookware and the benefits just weren't enough to offset this downside.

Not sure what kind of cooking class would lead one to prefer an electric stove....

You ever been in a commercial kitchen that uses electric? No. Gas is superior IMHO. We use a Viking, excellent.

Do gas ranges have a pilot light anymore? I’d not want to have that constant heat or concerns about carbon monoxide if new construction.

On mine the cook top is gas and the oven is electric.

I'm sure it still exists, but on a modern gas range, its electric spark starting. Hell....my grill has an electric start.

I have an 11 year old son who is a budding cook, he left the pan on the flame with nothing in it. He intended to put his favorite baked beans in for a snack and walked away got busy on his phone. I would need a jack hammer at this point to separate the pan from the cook top.

I think yes there is, but the steel under the grate is damaged too. If Chef Ramsey wants to come over I’ll gladly put him up.

I was mad at first, but I remembered Marty McFly setting fire to his parents living room rug and I got over it.

Wow, a Wolf range is pretty pricey to dump. Btw, I'm sure your son's vocabulary would make a sailor blush, after being with Chef Ramsey. Good luck n the range! My vote is for gas.

I think gas after this thread. You can but GE, or Kitchenaid and they are a few hundred dollars of Wolf which matches the other appliances.

The Scottish in me speaking... Maybe keep an eye out for a Wolf that has suffered a different tragedy and swap the required bits over.

We're in the middle of a complete remodel of a large house, my patience and time are gone at this point.

And yes there are lots of copper and aluminium pans that work with induction, and yes they are used in commercial kitchens, not that I inspect many. In commercial the gas is usually cheaper to run, they are on constantly. Induction to a regular electric cooktop two very different items.

For home use does induction make sense then ?

Yes, it makes complete sense.

I put a Bosch induction cooktop in during my large remodel. It’s super thin as well so I have drawers underneath it. I did need to get a set of pans, but that was not a big deal, was a little pricey but only because I wanted ones made in the USA.

Cast iron works great on the induction too, so I use mine very frequently.

For me, I will never go back.
