i got back from my vacation. i met up with my brother and some old friends. made a few new friends.

we brought no protein for lunch or dinner, except one night of pork chops. we made lemongrass marinated chops. awesome!!

the rest of the meals were, "oh-o, we better catch some fish!" we did for the most part. we ate some great meals. one was super interesting. they called it, "jungle style bbq" blew me away that it worked!!. we caught fish, bludgen them, and put them over fire. (one dude went to camp early to build up a hot coal bed.) no scaling, NO GUTTING! then you simply peel back the skin, and eat the white meat. you dont get near the guts unless that is your thing. the meat was wrapped in lettuce, and stuffed with some really strange aromatic herbs. mint, clilantro and a bunch of unrecongnizeable stuff from a guys garden. bitter, fresh tasting. you dip it into a fish sauce mix called Nouc Cham. and stuff the pocket into your mouth. it was unbelevable. so delicous.

Some big strippers no make that stripers! Were ya back at Texhoma? Next time try some noodling. That is how to catch some big ol fish!

Even ladies can do it!

Yep, I've seen several videos of lovely young ladies in bikinis noodling.

I don't think I'd recommend noodling a mekong catfish.

Looks amazing - had similar in SE Asia. Love the crispy skin.

I do prefer to gut them personally - have just heard bad things about not doing it. NEevr looked to see if it was done that way when I had it in Laos.

I wonder if the key to gutting or not gutting is time. IE, catch the fish and cook the fish in <8 or 12 hours and you're fine to leave the guts in, but if the fish are dead over some amount of time, then you probably want them gutted.

i would noodle with either one of those two ladies. i actually asked about it, and the entire group of guys i was with..which coincidentally were born along the mekong river said, "oh hell NO! (in unison)" now i know why. we all as a group may visit Vietnam for some fishing. they know local people. it would be the trip of a lifetime. two lifetimes.

There is a Thai restaurant near me that has a whole menu section called "Jungle Style"

things like fermented land crab salad, Isaan dishes, offal... ordering from that part of the menu is brave...

Great looking meal Vash! FYI- Noodling is a very exciting sport- Highly recommended. Several years ago I convinced my neighbor to go with me to Cache Creek, OK. Skipper Bivins was our guide (before his "Hillbilly Handfishing" program on Animal Planet). We wrestled 8 total, and the largest flathead was 53 lbs.

First thing my eye saw was the Nouc Cham. I could drink that stuff. Take a ball of sticky rice and dip it in or pour it on Banh Cuon. heaven

Hi Stevej37- 3 Pairs of socks, as even the largest flathead will only tear through the first two sock layers. Skipper believed in the "feet first, then hands" technique. He would work the bank ahead of us to find the nesting hole. He would then get behind us, we would shove our feet into the hole (generally 3-4 feet under the surface) and he would support our head/upper body to ensure we wouldn't drown. The flathead would attack your feet, and then you could slowly pull your legs out of the hole while transitioning its mouth to your hands. His one key rule... "always keep your hands in the water, and off the bank" No copperheads will ever be in the water, and you'll never see the one hidden on the bank that decides to tag you.

You have no idea what you are talking about. Cleaned and cubed properly, amazing. You are invited to the next fish fry.
Something else, setting limb lines with perch as bait at 11:00 at night, going back out a couple hours later in the moonlight catching some prehistoric looking monster fish, bad axx!
They talk about food shortages, If every grocery store shut down for a year, life will be good.

I've come out of the water with a fish on a Hawaiian sling and roasted it over a beach fire while it's still wiggling on the spear. Delicious! the only way you can screw up a fish that fresh is to over cook it
