Truffle Oil
Taking a PM public and hoping to hear from Shaun and others who care deeply about food as art. Where do I get real truffle oil?

The Farmer's Market sometimes has the real stuff. You know when it's real it sort of "dances on your tongue."

And to show my sincerity, here is today's culinary ensemble. Here, you are seeing a wedding photo, a votive candle, a flowering orchid, some rice vinegar and some Cholula hot sauce, black eyed peas (which are really beans), garden collard greens and carrots harvested minutes before cooking (taste is beyond description), rice, and locally "grown" pork chops. I'm gonna get me one of those pork chop trees because they make pork chops which are WAY WAY WAY better than grocery store chops.

It's a great question and I think the true answer is that you "can" find real truffle oil but at what cost?
And at that point you need to ask yourself how refined your truffle game is and how much you "really" care. Alternatively you can go balls outside your zipper and buy a truffle and chop it up and throw it in some nice olive oil for a while. Total cost will have a comma in it!

I'm super critical of restaurants that think flavor should come from a bottle. They tend to throw hot saucce on everything and think that's cooking. Flavor should be built up in layers, no matter what.
But in the case of infused oils, I can't see making them from scratch unless it's with lemons. Maybe pickled vegetables too. White Truffle oil: https://www.williams-sonoma.com/products/white-truffle-infused-olive-oil/?pkey=coils |

This is a local company that makes and bottles several flavors of infused olive oils and balsamic vinegars. Might be worth a try.
