Cow Tongue Sandwich......

Boil it. Peel it. Slice it.
Place it on rye bread smear on some catchup and eat.

I grew up on em. They are really good.

Anyone one else eat weird stuff?

Yea I forgot the horseradish. Speaking of which me and my father used
to make our own when I was ten years old. The first time we had this old meat grinder attached to the kitchen table. I was grinding and he was feeding the root. We both were crying so hard and he looks at me with this huge smile and says "stronger than marijuana isn't it?
We both were laughing and crying at the same time uncontrollably.
It was great memory. RIP DAD

As a young kid, I loved it. Then, all through high school, I worked every day after school at a butcher shop. The tongue came to the store in its natural state.......haven't eaten it since. My wife loves it, but I have to put it out-of-sight in the refrigerator. However, I learned how to properly sharpen a kitchen knife.

My family is Pennsylvania Dutch, so we eat scrapple. If ever seen the parts they boil down to make the scrapple, it'll make tongue look pedestrian.

Brains, eyes, heart, liver, "fixins", along with corn meal, buckwheat or other flours, spices. That's one old recipe, anyway.

Yeah, basically they take whatever is left after butchering and throw it into a cauldron to boil it down. Sort of like making stock for chicken soup. We're talking EVERYTHING....the entire head, parts of feet, bones, etc. They let that boil until everything solid (bones, etc) has been fished out. At that point, it's like a grey very thick soup with lots of little bits of meat. Then they basically add flour of various types to get it REALLY thick, then pour it into pans where it cools and coagulates into a sort of loaf. When you want to eat it, you slice off a piece of the load and fry it in the frying pan.

Whe I was a kid, my mother used to make mincemeat from the pig's head. She'd order one cut in half, take out the brain (to feed to my dad in scrambled eggs) and boil the two halves. Afterwards, she'd pick the meat off of the head and use it for the mincemeat. Then, she'd chop up the nose, lips and ears and put them in cornmeal mush she would make from the broth that was left over. Haven't thought of that in years.

My dad ruined me on cow tongue at a very early age, like about four. Somehow he thought is was funnier than hell to chase his screaming little kid around with what we will call an "extremely fresh" one. Now I'm not squeamish or anything, I do put most of the meat on my own table and make use of everything, just not the tongues. It helped to grow up with an Irish farmer for a dad and the daughter of a German farmer for a mom. I still enjoy dinner at my mom's when she serves some of her "earthier" old German recipes. I trade her rides in the 911 for meals; it's a great way to spend a day with my mom.

My neighbor made deep-fried chicken hearts for us this summer. The kids were in the pool and they all tried and liked it, even the finicky ones. It tasted like dark meat of chicken (because that's what it is).
