Something that goes with wine, like pasta. Keep it simple get some salad, bread, wine, pasta and sauce and enjoy time together not jumping around in the kitchen.

Grilling on the BBQ works...Grilled Shrimp, Fish or Steak....
Salad with an exotic dressing....eg not Ranch....something like a Blackberry Vinagrette.... Some nice Bread... A Wine Coffee afterwards, and a nice desert.....like Zuppa Inglese If Grilled Shrimp (5 to 8 to the lb)a nice Thai Peanut Sauce served with rice.... If Steak....serve with a mushroom, marsala, shallot sauce...

Like BD says, simple pasta that goes well with wine. Think spaghetti with garlic bread, and maybe a salad, and a reliable wine -- Bella Serra Cabernet, or a Bolla Merlot, perhaps. Not something terribly pricey, but not something you've never tried before. You can prep most of a simple pasta dinner before she even arrives, so that when she shows, it's only a few minutes until dinner, with minimal prep. If you must do something fancy, at least provide a quickie appetizer to occupy her while you're being stupid in the kitchen.
Alternately, do something that the two of you can cook together works pretty well. I've made my share of team dinners before, and it can be kind of a fun experience. If the two of you are together in a small kitchen, opportunities arise that may not happen otherwise, "greasing the skids" for later. Quote:

Shorter the menu the better. Focus on 2-3 really good things and two good bottles of wine.
A kick-ass appetizer if she's not too diet conscious - 1 wedge of brie cheese in a baking dish 3-4 table spoons of brown sugar sprinkled on top Oven for 12 minutes at 350 or until partially melted (not burned) Serve with a platter of sliced fresh baugette bread and green apples. |

I make some good spaghetti, and do the garlic bread and wine along with it also.
My other options are a roast or some sort of thrown together shrimp and pasta dish with a light olive oil and butter sauce. Considering I can only make about 5 or 6 decent things, I guess I do alright. ![]()

I'm not single anymore, but when I did cook for the women; lasagna.
Lasagna goes good with lots of red wine as mentioned earlier, may be veggie or meat, plus salad and crunchy bread sticks make it fun for a nervous mouth. Also it keeps in the oven, just in case she runs late, or if you get busy cooking something else (like her) before dinner. ![]() If you get stood up, leftovers are still tasty. ![]()

Crab cakes. Easy to make, but appears to be somewhat complex. A salad starter and a side of cous-cous. Decent bottle of wine--if going with white, pull it out of the fridge 20 minutes before serving, if red, put it in the fridge 20 minutes prior to serving.

You can also grill some veggies on the grill ...asspargus, corn, eggplant etc....brush with olive oil....
Daddy you want some elegance....sophistication....yet not a real time killer in the kitchen...everything I said can be done ahead of time and or prepared to go except the steak which takes grill time... Another fantastic desert that is soooooooooo simple yet killer is Bananas Foster....BUtter, Sugar, touch of Cinammon, 2 or 3 Banana split....flame with 151 Rum and serve over ice cream....so easy a Retard could do it..yet is killer...
