When you slice a Standing Rib Roast aka Prime Rib....you have Rib Eye Steaks, and if you only take the centers of the Rib Eye they used to be called Spencer Steaks....

It's all just the same cut of meat, it is just how you cut and prepare it.

Well, Tabs, turning a wonderful Rib Roast into a wonderful dinner, is what I would expect.

Make something as good, starting with merely sirloin tip, that is genius and talent...

Tabs,

You are a ba$tard for doing this I hope you know! I am in stuck in frigging Hong Kong and would kill for a good piece of meat. Of course they refuse to import American beef here (mad cow crap) and so we are stuck with the stringy local stuff and fried chicken feet.

Hope it constipates you.... course if you have too much I can send you my FedEx number and you can send some over. Slide in some of those excellent ribs you smoked last week as well. Will bring you anything you want (almost) from HK!

Are you Crazy?

You can't make gravy with foil! And making gravy basically cleans the pan! Mmmmmmmm.

Mmmmmm. Maple infused gravy....

A nice Hess Collection red blend, Mountain Cuvée - Mount Veeder, Napa, 2002. A little black pepper and vanilla over dark cherries and black berries, mellow tannins, maybe could smooth out a bit over a couple of years, but extremely drinkable now. (It's blend of Cab Sav, Syrah, Merlot, Malbec and Cab Franc...)
