Has anyone ever tried black truffle?

in my past life( early 80's) I was a Chef in SF. I do parties once in a blue moon and the next party I am talking the host into buying some black Truffles. 13/4 ounce for $90.00!
The "shavings" will go nicely in the risotto.

Those look like something I found growing under my bathroom sink.

Why do people eat this kind of stuff? Did it all start out as a dare? "Pierre, I've give you 5 francs if you eat this black stuff I found in the dirt under a tree..."

Some pig farmer noticed one of his pigs digging under a tree
The pig never got sick, in fact was the most healthiest.
the farmer tasted the truffle and the rest is history.
Some other story is , this dude could not get his wife pregnant for years. he ate a bunch of truffles and wa la
7 kids!!!!!

How do you bring out the flavor with those truffles, yet not kill the flavor?...Saute?



This used to be my favorite mushroom...They sorta leave you with no appetite within about 30-60 minutes.

They do have a unique melt in your mouth smokey flavor.

Just the other night I had Fettucine with sweet sausage and black truffles. It was a most worthy meal.

Once every year I get a crop of chanterelles at my house in Vermont. Ill go out and pick a basket full, and whip up something delish.

Those other mushrooms its been years but the memories are all good

it's less obvious as you get older (the mind is less adventurous , brave, or dare i say it , dumb&balsy)
but going psychedelic is more meaningfull then it was at say 18...( although more serious stuff is required for truly psychedelic voyages )

even for mild , non psychedelic trips... one mild mushy is very rewarding...mellows things out, evens out the perspective...

There's a bit of a shortage this year. So prices are high. The best ones are from Perigord but, no surprise, they often come from other areas in reality. Lots of restaurants stretch them out by using an essence for flavour with minimal shavings for show. The white ones are pricier!

I've had black truffle in a rice dish, found it very good. It's pretty strong, certainly didn't take as much as seen in your picture to impart sufficient flavor, that much would just about knock you over.

That photo is for size reference only, you only need a few shavings per person to impart enough flavor.

Black truffles are good. White truffles are incredible.

Actually, wouldn't white be more appropriate over risotto?

Not really..presentation has much to do with whether a dish works or not.. White truffle would certainly flavor the risotto, but there would be no visual.

With black truffles you will see all the shavings in your risotto, confirming that yes there are truffles in your dish

Truffles are very aromatic and flavorful, a very little goes a long way.

However, it can be a little disconserting/wasteful when truffles are served and guest do not know what they are or don't like them.

Blowin out the pipes as Jerry Garcia once said. Been a while since ive done that.

So what does a truffle taste like anyway? Would i be able to tell the difference between good and bad, or is it a learned thing?
