				man, i cant flip over-easy eggs without a spatula!
			 
			damn, i got no finesse.  i destroy yolks.  what is the trick?  i got the superslick pan, the PAM, fresh eggs.  (just laid today...the eggs)... i watch the shortorder cooks. doesnt look like anything special. cliff

			Seemed to me it wasn't so much "flipping" as a "roll over" type motion.  I found that after some practice of moving the pan forward to where the egg goes up on the curved edge, followed by a quick & slight upward movement & letting the pan move forward under the egg as it does a rollover did the job.  I guess everybody develops a trick that works for them though.  Practice makes perfect.

			I've flipped *thousands*. Medium heat. Think campstove flame. Do a little front to back motion to get the egg moving. Point the pan downwards while moving the pan forward, then in one quick motion, jerk the pan back toward you while flipping the front of the pan up. Let the eggs land in the pan, but allow the pan to move downward to absorb it's fall, avoiding the broken yolks. If my video cam was up an running I'd do a quick shoot for you.  I can crack eggs with both hands at the same time, too. I would love to know how many eggs I've opened in my life. I'd guess 50,000. KT

			The problem may be the curvature of the pan. If the lip is too steep or too flat, it makes flipping tough.  I can crack eggs with both hands. I can open beer bottles with my teeth two at a time. (One on each side.) I opened a six pack like that in about 10 seconds once!

			turn the heat up high.  once the eggs form up, pour in some water 1 oz, cover for 60 seconds.  The steam will form up the tops & you can turn easier.
