Costco / Sams Club Meat

The USDA Grading of meat goes...Select, Choich, Prime...it is all based on the amount of MARBLING in the meat the more the higer the grading.

Most Grocery chains sell Select, Sams and Costco sell Choich...Prime is usually reserved for resatruants.

Now here is the the TRICK Boyz....When you goe through the meat case for lets say Rib Eye steaks, pick out the package with the MOST MARBLING (little white streaks of fat)....sometimes at Costco and Sams you can find steak with lots of marbling in them those are steaks that have been graded Choich, but are in fact Prime.... Those are the steaks that will be the juciiest and tenderist of them all.

Most people go euwww its got too much fat...its the fat that makes them tasty ya dumb fk....

Anyway my local Sams sometimes has meat that is about to expire (the sell by date tag) they mark the meat down by about 30% to sell...I usually will go in and buy most of them..go home and freeze..pulling out a grat steak when I feel like it. Right now I probably have about 25 Rib Eyes and New Yorks in the freezer.

Another good value at Sams is the pork loin.... comes in one big ol chunk and you can cut the steaks as thick or thin as you want.... all I have gotten have been very lean.....

I buy the whole tenderloins at Costco. Vacumn packed in plastic, takes some final butchering but makes for some delicious meals. Make a mean pan sauce using Grand Marnier.

The problem is that "LEAN" means no fat and it is the fat that makes it juicy and tasty...

I have smoked whole PR before...here in Vegas if I want PR I just go down to Jerrys Nugget and order the 28 ozer dinner for $16.95. Anybody from this Board who has been there with me will agree it is a great pieice of meat.

Today went to the Belliago Buffet at 3:45 Pm and got Scallop shrimp Ceviche, Octopus Salad, Smoked Salmon, Satshimi, Tuna Sushi, Mussles marinated, King Crab split, Shrimp, mussel, scallop scampi, PR and deserts for $21.50. Plus varius other little tidbits to munch on How the fk do ya beat that????

I've had steaks from Sam's and Costco's and I would say the Costco's were much better. The steaks I have gotten from Sam's tended to be thick, tough, and not too much marbling.
