Good dish to take to a block party bbq?

Best dish that is besides your own wife...

Civiche brine
On a hot summer day can’t beat a bucket of cold Coronas w lime and a bucket of Civiche w/chips/crackers.
Don't be the guy that brings chips or cold pasta salad from the deli.

1 cup lemon juice
1 cup lime juice
1 tablespoon salt
1/2 red onion sliced thin
1/4 bunch cilantro, chopped.
1 lb fish (yellowfin tuna or ahi tuna works great) cut half inch size squares.
1 Anaheim pepper you can add serranos or jalapenos if you like spice
Soak overnight or longer in fridge.
Leche de tigre is the remaining drinkable brine, recipe from Peru.

Try it.

Try it with Bay Scallops. Place on deep fried (flat) corn tortillia. Top witha bit of lettuce and guacmole and sour cream....also have a small bottle of Mexican hot sauce to add to the top and yeowzerrrrrrr you got a hit....

Ohhh...yeah a bit of finely diced tommato should be in with the Ceviche. It cooks the fish by oxidizing it.

Some sort of baked chicken wings situation-

I'm an expert at marination; Yet, all my experimenting means nothing compared to my grandparents' Binghamton, New York recipe for "speedies". This is normally a sandwich with marinated lamb: the marinade is Italian dressing with extra garlic and black pepper added.

My recommendation is to marinade about 24 wings in this "speedy" recipe, and then bake them in your oven prior to the event. This marinade gives them an herbal aroma that will clean house! Wings are always popular at community events.

Hey tabs good tips,
the wings sounds super easy to thanks.

Here's a super easy citrus bbq brine.
Chicken brine.

1 chicken separated.
I prefer to bbq legs/thighs only with the skin on.
1/2 gallon water in a large stockpot
1/3 cup salt in stockpot
1/3 cup sugar in stockpot
1 lemon juiced into stockpot
1 orange juiced into stockpot
Soak overnight in fridge.
Meet room temp, pat dry.
Sprinkle paprika, pepper, garlic salt on chicken and bbq.

So, got an easy dish to share?

i guess the acid keeps the bacteria at bay. warm days and perishable food make me nervous. nothing like a sun warmed platter of deviled eggs..yum.

i love ceviche. i love the fruityness of habanero peppers. seeded/trimmed.

saute chopped onions and garlic in butter. brown 1 lb. of ground beef, drain. add a can or two of refried beans, several dashes of Worcestershire sauce, 1/4 cup of good hot sauce, and a little cayenne.

In a casserole dish, layer the bottom with doritos (the hot ones).

Layer in the beef/refried mixture. Spread a good sharp cheese all over that, make it thick.
If ya wanna get carried away you can make two layers of the beef beans and cheese. Pop it in the over at 325 for 10 minutes, then take it out and let it cool.
Cover it with a thin layer of sour cream, chopped dark olives, avocado slices dipped in lime juice, whatever else you might want. a little red salsa on top of the sour cream is a nice touch as long as it is drained.
Serve that with a mess of fresh and warm home-made tortilla chips and you will be a hit.
simple but real tasty and it will be gone quickly.

Place part of ice in cooler
Put some beers in
put more ice in
put more beers in

hook your cart up to your lawnmower
strap cooler to cart
drive on down!

Pasta salad is always good. Especially if you home grown tomatoes in it

My wife mixes up some sort of vinegar and oil concoction, maybe balsamic vinegar and italian dressing, tasted sesame oil in it last time, cuts up tomatoes in chunks, chops some red onion, lets it sitfor a while in the fridge, few hours. That would be good

We always bring pico de gallo and use fresh cilantro, tomatos, peppers, onions, garlic, etc... it's always very popular at our house in the summer during cookouts.

I'm trying something new for dinner today, BBQ Chinese pork shoulder using one of those pre-packaged spice/marinade packets from the Asian food section. Some white rice, beans, etc.
I'm thinking that sounds pretty good, hopefully it will turn out OK.
