I'm certainly open to learn more.
All I know is that one should chew long and thoroughly because enzymes or something in the saliva contribute to some percentage of the digestion process (forget what percentage).
As I understand it, most, but not all digestion occurs in the stomache (and intestines?).
All chewing (also called mastication, tee hee!) takes place in the mouth.
At least it does in mine.
