For the chefs..hibachi question.
What is the watery, brown sauce they cook the shrimp in? You know, the little fellas they toss into the crowd for comedic value
I'm sure it's a soy base but there is definitely something else there. They always have it in a ketchup or mustard style bottle and squirt it all over the shrimp while it cooks. It has to be simple but what is it?

Really, that's it? Maybe the ginger is really taste altering but it seems more different than just soy for that to be it.

That's what our local guys use. The other sauce for steaks is yellowish and is a combination of soy and mustard powder.
