Crock Pot -------------> Smoker?

Yes! I made up a BBQ marinade last night with some super hot Thai chili paste, ketchup and brown sugar among other things. lots of water, threw in 4 chicken thighs last night thinking it would reduce down to a nice syrupy sauce. it did, but got busy this morning and it went down to a paste. Smelled so good and all the sugar was starting to burn, I decidedly to let it go, and let it burn full-on for the next 30 minutes.

WOW!

Serious burnt crust on the outside, heavenly smokey sweet BBQ chili flavor throughout the meat, which just fell away from the bone.

here are 2 thighs cut up on Wonder Bread with mayo and some cooling dill pickle relish and cole slaw. Just devoured it.

get a crusty bread and revisit that meal. it looks great! was the slow cooker a pain to clean?

I see you haven't traveled far outside of SF my friend! Wonder Bread is THEE bread of choice for real southern BBQ. It is soft and mushy and melts in your mouth with the meat. this is not a meal made better by contrasts. The chicken, bread, mayo and relish, all together, rivaled some foie gras I had a few weeks ago.

You can improvise a smoker by putting some herbs/chips/whatever in the bottom of a pan, keeping the meat raised above it with a wire rack. When you turn on the heat, the herbs start smoking (use a tight fitting lid of course). Keep that going for a little while, then pull the chips/herbs and cook as usual...

oh. i did not know about the wonderbread thing..i have eaten bbq with sliced bread. i found it strange.

i like bread with body.

I make a great German Rye. Easy day to make your own. And for those of you with a bread machine, grow up Sour dough is even easier and for that wonder bread at home, a basic white bread using 50/50 water with buttermilk! AND DON'T THROUGH AWAY ANY OF YOUR SOURDOUGH STARTER, it makes a great room fresher, smells like beer.

Matt, I actually used the crock pot as a smoker. Letting the sugar burn slowly produced the effect. BTW, to get such great burnt crusts, I flipped the thighs over so that the skin side was down.

I think you could do with some tuna scraps. make shallow brine of soy, ginger, garlic, rice wine vinegar, brown sugar and orange marmalade. after marinating overnight, put it in with maybe a quarter inch of the brine, let cook...burn. worth trying with some scrap tail section.

I've got babybacks and Sweet Baby Ray's planned for next week, 15 hours+.

looks tasty, but I like a little more siriachi sauce. Can you give out the rest of the recipe for your marinade or is that an ancient secret, not to be shared with the public?

hmmm, not sure if whatever I can find in the fridge would qualify as an ancient secret.

I had ketchup, brown sugar, the siriacha sauce, garlic roasted in olive oil (great snack by itself!), apple cider vinegar, little soy, 4 McDonald's Hot Mustards and a little Indian garlic pickle.

I put a lot of siriacha sauce in it, but not enough, could have been hotter.
