Crock Pot -------------> Smoker?
Yes! I made up a BBQ marinade last night with some super hot Thai chili paste, ketchup and brown sugar among other things. lots of water, threw in 4 chicken thighs last night thinking it would reduce down to a nice syrupy sauce. it did, but got busy this morning and it went down to a paste. Smelled so good and all the sugar was starting to burn, I decidedly to let it go, and let it burn full-on for the next 30 minutes.
WOW! Serious burnt crust on the outside, heavenly smokey sweet BBQ chili flavor throughout the meat, which just fell away from the bone. here are 2 thighs cut up on Wonder Bread with mayo and some cooling dill pickle relish and cole slaw. Just devoured it. ![]()

get a crusty bread and revisit that meal. it looks great! was the slow cooker a pain to clean?

I see you haven't traveled far outside of SF my friend! Wonder Bread is THEE bread of choice for real southern BBQ. It is soft and mushy and melts in your mouth with the meat. this is not a meal made better by contrasts. The chicken, bread, mayo and relish, all together, rivaled some foie gras I had a few weeks ago.

You can improvise a smoker by putting some herbs/chips/whatever in the bottom of a pan, keeping the meat raised above it with a wire rack. When you turn on the heat, the herbs start smoking (use a tight fitting lid of course). Keep that going for a little while, then pull the chips/herbs and cook as usual...

oh. i did not know about the wonderbread thing..i have eaten bbq with sliced bread. i found it strange.

I've got babybacks and Sweet Baby Ray's planned for next week, 15 hours+.

looks tasty, but I like a little more siriachi sauce. Can you give out the rest of the recipe for your marinade or is that an ancient secret, not to be shared with the public?
