Favorite Pay TV Series

What are the best shows over the last few years that have been on Showtime, HBO, FX, AMC, etc. that are worth watching? I have not had premium channels for many years and no pay TV at all for the last 6 months.

So far I am up to date with:

True Blood
Californication
Sons of Anarchy
Nip Tuck
Weeds

Currently watching Breaking Bad and have The Tudors on deck.

I like to wait until a season or so is over then 'catch up' over a few nights after the little ones go to bed.

So far, Californication has been my favorite, followed by Sons of Anarchy.

Entourage - 2 seasons ago I was ready to give up, last season won me back.

Californication - Brilliant writing, great dialogue, fun characters.

Weeds - Beginning to loose interest, plot line getting too bizarre.

Dexter - I did not think they could top the 1st season and they did, looking forward to the 3rd installment.

True Blood - Who knew a vampire series set in the deep South could be so good?

Couldn't have summed it up better myself.

The finale of Entourage last year really left me begging for more. I can't wait for the new season (which I think starts in June).

Nip tuck early on, but then it seemed to careen out of control.
Rome is excellent.
Sons of Anarchy on FX was pretty good for it's first season. Peggy Bundy is still hot.

I have become a huge fan of Madmen on AMC. I can't wait for the new season to start in June!

i almost went through symptoms when deadwood ended. what a brilliant show.
since then, dexter is my new favorite.

I'm not seeing Rescue Me here...

It's nice when a series is on DVD and you can blitz through. Don't feel like paying for HBO or Showtime anymore, so it sucks waiting for the latest seasons to come to DVD. Liked Carnivale and Deadwood so much I watched them twice.

Don't forget Firefly, Huff, or The Shield. Agree with most of the suggestions here, except The Tudors. Watched all the DVDs and regretting it. Such a bunch of self-absorbed ass holes.
