Fried Green Tomatoes

Anybody got a good recipe? How DO you make them?

sure

you gets yore 'maters and drops 'em in a thick beer batter

then drop 'em in the deep fat fryer - but not all at once -- only do 3 at a time
that there's the secret to deep fat fryin' - keep yore fat HOT

then you put 'em all out on a paper bag and dust 'em over with red pepper - roll each one aroun' in it real good

then fry 'em up agin in a skillet

thar ya go!

That was a movie about lesbians.....


A guy I used to work with's wife told him the movie "fried green tomatos" was a story about lesbians......and he watched the whole thing only to realize after it was over he was duped LOL

Beer batter? Deep frying?
ITT: Yankees frying 'maters.


Select firm, green tomatoes. Not white. Not slightly yellow. Green.
Slice them to 1/4" thick.
Lay them out on a sheet pan and lightly salt them. Let sit a few minutes, then drain off excess water.
Dredge them, individually, through APP flour and lay back on the pan.
Put a cast iron skillet on the stove, pour in 1/8" - 3/16" of good vegetable frying oil, and heat to 375f.
Once the oil is up to temp, lay in just enough slices to cover the bottom of the pan.
Set up a draining place because some oil will come out with the maters. A wire mesh cooling rack sitting on a sheet pan works good. Some people like to lay them on paper towels to soak off the oil. Either is fine.
Get back to the tomatoes... it's probably already time to turn them over. Do not flip more than once. When they are golden to light brown on each side, use a spatula to move them to the draining apparatus.

Keep cooking till you're done. You will need to add more oil from time to time to replenish what is being removed. Make sure you let your oil come back up to temp before adding more mayters.

You'll need to sample some of them from time to time while you're cooking.

i have made them a few times...friends/family loved them...but i like my tomatoes ripe off my vines. i thought the breading is typically cornmeal based?...i cannot remember. i did them japanese style, tempura. i salt them once out of the hot oil. before hand draws out too much moisture and the crunchy skin falls off.

Ok, no offense to anyone who has posted but the closest Correct way to fry these babies was posted by "cashflyer" from Greenville, South Carolina. Beer batter is better for onion rings or mushrooms.
However, he came close, but didn't hit the nail on the head. I live about 15-minutes from the Irondale Cafe in Irondale, Alabama which was the model for the cafe in Fannie Flagg's book, "Fried Green Tomotoes at the Whistlestop Cafe" that the movie - the one without lesbians, but who knows how that could have advanced the plot - was based. I've eaten them there. They are divine.

Being born and bred in the Deep South where we know how to fry anything, and I mean anything, follow the instructions on "cashflyer's" post but mix in some corn meal with the flour, about a 70-30 corn meal/flour ratio. You Must use a hot Cast Iron skillet to properly fry whatever you can grab hold of.

There was a great line in that movie. The character played by Kathy Bates was searching for a parking space in a shopping center lot. She'd driven around, waited, etc. until her patience was worn thin. All if a sudden she sees a space opening up and starts to roll toward it. Just then a young, hot-tail girl slips in front of her. The girls makes the mistake of saying to Bates, whom I seem to remember was having some sort of age crisis at the time, "Face it, I'm younger and quicker" or something along those lines. Bates, who's had enough, puts her car in reverse, backs up, then speeds forward ramming the bimbo's car repeatedly. As the girl shrieks in horror. Bates then says to her, "Face it, I'm older and have better insurance."

I see Fannie Flagg from time to time when she comes home to Birmingham. She's an excellent writer as well as actress. She played in Five Easy pieces with Jack Nicholson as the waitress who Jack and his cronies were giving a rough time in this little diner... there's a scene where Jack keeps ordering something they didn't normally serve and goes all "Jack" on her. He keeps telling he doesn't want something on his sandwich or some substitute and she's all they don't do it that way, etc. She finally asks him what he wants her to do with the cheese, eggs, or whatever, and he tells her to 'Put it between your knees" in the evil, low drawl Nicholson has. A classic movie!

I'll sugest to Fannie she do a sequel to Friend Green Tomatoes featuring lesbians.
Who should be in the movie?

Just saw the post from "vash" you're right about the corn meal being the base!!!

From the Whistle Stop Cafe Cookbook (Irondale AL):

1 1/2 cup Flour
1/2 cup cornmeal
Salt and Pepper
Milk
Vegetable oil

Mix flour, cornmeal, salt and pepper with enough milk to make batter consistency of pancake batter. Dip sliced tomatoes in batter and deep fry.

Living so close to the place I'm sure I'm breaking some law since I don't own the cookbook, so thanks for pposting their recipe, Stephanie.
I guess growing up with a grandmother who was a killer cook spoiled me, so I just cook like she did, hardly ever using a recipe. She may have reversed the cornmeal/flour ratio, though.

Just thought of why I was confused! Fannie Flagg played a waitress in a scene opposite Melanie Griffith in "Crazy in Alabama" written by Mark Childress!!!!
