Dunno... Elaborate on your question.

I'll say this. In general, when mixing things that will be baked, thou shalt combine the ingredients, not beat them into submission like a debutante at an S&M club.

Bad things happen when you over-mix.

Unless you are making something like a pasta dough, in which case the beatings have a purpose.

most master bakers i know have so much work they haven't got enough hands to do it by hand... mixing cake batter is not rocket science, and a machine will always do a better , faster job an getting whatever it is you're mixing, to mix in an optimal way.

And the right machine, with the right kind of extension will do whatever you want it do do... simply mix A with B, or Mix A with B and get air in the mixture, or not...
This is one thing where hands just have advantage over a machine...


IF we were talking about getting some kind of dough, shaped in whatever cosmetic shape, then yes, that's something hands can do better then a machine... but the simple job of mixing... no way.

Yes, you can get by with a hand mixer.
Yes, you can get by with a mechanical mixer.
Yes, you can get by with no mixer and just use your hands and a fork.

Oh, and by the way. I think they call them mashed potatoes for a reason. Hmmmmm,,,never heard them called riced potatoes. Maybe they call it mashed pilaf, too. Just sayin'..........

Bobby Flay did a throwdown with that red velvet cake stuff. Search his show on foodnetwork. I don't remember if he won or not......
