Chicken with plum habenero gravy
I used chicken leg/thigh quarters. Browned on both sides in a pan with a little oil.
Heavy splash with some cheap, sweet riesling, scrape and reduce. add: 3 ripe plums, rough chop 1 large yellow pepper, rough chop 1 habanero. I just cut down the sides saute on high heat, then lower, add 1 cup chicken stock, some honey, some brown sugar. simmer for 30 minutes, add a little butter. pull chicken out, empty sauce (everything is cooked way down and very soft...could run through a processor) into a bowl, add to 1 cup yogurt stirring as you add. You could also thicken with heavy cream or add a roux if you wanted as well. the yogurt gave it a nice tang which went well with the sweet & hot. no pics and to be honest, it's not the prettiest food you'll serve even if you dressed it up with fresh plan fans, etc. I suppose you could use boneless chicken breasts and dress it up a little if cooking for a date.

Sounds great. I agree on a recipe sticky.
I have a recipe question. From the Easter ham, I made a ham stock last night. It tastes great, like liquid ham. Now, what does one make with ham stock? Besides split pea soup?

Your "Ham StocK" would be great in as the liquid in Risotto ...
Ham and mushroom Risotto. or Maybe add some crisp bacon put in in a small dish cover it with cheese and do a quick bake / broil. Pumpkin Bacon soup Yes ... you could do good 'ol split pee soup . but I think there are better thing to play with.

it add a little extra smoky character to jambalaya instead of using chicken stock.
