check out last night's dinner.

i had nothing planned. so i winged it bigtime. it came out effen unbelievable. i made broccoli raab risotto and topped it with some simple pan seared scallops. my wife grubbed it, and loved me some more..hahahha.



later this afternoon, homemade slider burgers, and slow braised baby back ribs (finished on the bbq grill!)..carrot salad. i have my wife's Taiwanese family coming over. i bridge the language barrier with food.

i keep a bag of frozen scallops in my deep freeze. these are a japan product from Trader joes. maybe $11 per lb. i wanted huge ones from a store..$20..i almost fainted so i quick thawed my stash.

You were one ingredient away from perfection. Both broccoli rabe and scallops go great with cured pork-think scallops wrapped with bacon, or orrechiette with broccoli rabe and sausage-so I'd have maybe diced up some pancetta or crumbled some sausage into the risotto. Well done in any case, pass the vino rosso.

Tonight's supper was sloppy nachos/joes.

egads!! empty nesters here. if we had kids, they would eat it. first words out of my mouth was not "mommy"..it was "let's eat!"

I LOVE scallops. There is a cafe that does them perfectly.

I pan sear them too, being careful not to over cook. I've heard there are now scallops in the sea across the road from here - yay. I'll be out with the snorkel when the water is a little warmer.
