I mean, you're telling me Boeing doesn't do IP67 shielding of the boxes on the pedestal to prevent precisely that from occurring? 777 Control Pedestal How would one inadvertently squawk unlawful interference or emergency?

I don't believe this is entirely true.
All that equipment goes through extensive testing for mishaps like that. (MIL-STD-810F, Method 504, Contamination by Fluid). Its more likely the pilot spilt hot coffee on himself and as he jumped in his seat he pushed a button or turned a knob.

hmmmmm...sounds to me like he spilled coffee on the RMU, which screwed the button function up. when he discovered that the comms were squirrely, he went to squawk 7600 (nordo) and inadvertantly put in 7500 and probaby didn't notice it.
