Grilled Cheese Sandwiches. Jumping sharks makes me hungry

Ok, if it's got meat on it, then it's not a grilled cheese. It may be a patty melt or a grilled ham and cheese or something like that, but a grilled cheese is primarily bread, cheese and something to help brown the bread (presumably butter). I guess adding some sort of condiment might be ok, or even something like bacon bits or a couple of pieces of jalapeno.

I do love a grilled cheese. I'll eat them with American cheese, but that's not nearly the best. A velveeta (sp) grilled cheese is how I grew up. There are somethings that velveeta are good at, and getting all melty and gooey is one of them.

What I like even better than velveeta is Butterkase. It melts really well and is mild, but it does have more flavor than velveeta.

I'd be willing to try other cheeses as well if I happened across them.

My wife told me the other day, in her hometown in southern Illinois they call the grilled chees a "cheese toasty". I like the sound of that!

I used to work at a start-up company, that catered a lunch once a week. One of the caterers they used brought sandwich makings, and one of the things they always brought a bunch of was an excellent smoked cheddar.

After the first time they came, seeing the pound or so of excellent leftover cheese, I brought in a box of ziplock bags. When the lunch was over, I would come in and load up on the stuff. I probably took home a pound or so each time they were there. Sadly it was only about once every 5 or 6 weeks. Then again, maybe that is a good thing, or I would look like Dom DeLuise.

Anyway, this cheese, on good fresh sourdough made the best grilled cheese sandwiches I have ever had.

I wish I knew who made the cheese, because non of the smoked cheddars I have tried from any grocery store has been as good.

I thought it was common knowledge that the best grilled cheese was when you left the show after a solid day of drinking, drugs and The Grateful Dead.

Nothing quite like a $1 grilled cheese cooked in the parking lot on an old dirty Coleman stove!
