How the hell can I disable some of the crap it's doing...

Go into settings you should be able to enable/disable depending on what it's doing.

New Moto E6 Android...Gboard is all I see as a virtual keyboard. Would love to switch to other....otherwise

Check the play store. You might be able to turn off Gboard after you install another virtual keyboard.
