If you want a fun DIY project, get a donor skeleton and a LOT of ballistic gel. Make a mold from a mannequin and some organs out of much 'softer' gel. Place organs inside skeleton, suspend skeleton within your mold and pour pour pour your home-cooked ballistic gel into the mold. If you want a realistic skin, do a few layers of vinyl or plastic wrap on the outside.
Then enjoy your life-like Crash Test Dummy  Don't ask me how I know about this...
