SketchBook from Autodesk is awesome. I use a desktop version with my Cintiq.

An ipad is a Horrible device for sketching.
Any cap-sense screen will be horrible. They lack precision and lack pressure sensitivity. If you are going to use the ipad for sketching the best tool is a something like a bike glove so that you don't confuse the device with palm hits.

Sketchbook Pro is the best with the most versatility but can be more complex
Paper is probably the easiest

Inflow because of the zoom and detail. Also paper 53 is good for the selection of "tools". YMMV.
