Caprese sandwich! Fast, easy as a grilled cheese, but you look like a fancy boy.

Two pieces of toast, Soft Mozzarella, tomato, basil, and some balsamic vinaigrette from a bottle or something.

Eat cold or you can do it in a panini press too and it's super tasty.

I do grilled cheese and tomato soup in cooler/rainy weather -- tasty and simple. For style points, I like to put a slice of tomato in the cheese, and put whole chunks of tomato and some basil in the soup. Yum.

Chili is always a win, especially in PNW rainy season. My chili typically only includes a little beef, and is actually "salsa in a crock pot," but it's surprisingly popular.
