It still takes several weeks to ferment and condition a good beer. I'd really like to make a smaller 2.5 gallon countertop version of my current setup for pilot batches w/different yeast strains and for the chance to brew extracts indoors again. Every time I put the parts list for the system together I remind myself that I really dont want to go through the brewing and waiting process for less than 3 gallons of beer.
