What causes the speedo to freeze after a accident?

Kinda curious. I have seen a lot of salvage cars for sale with the speedo frozen at certain speeds, but I always took that as the speed at the time of the crash. However, here's the speedo from my Buell. Going about 30 mph on impact.

Well that sure ain't what the speedometer says if it indeed "froze . Of course if it had you probably wouldn't be here taking to us too...
