I know we are talking about chefs knives but I think the Chef Steps guys have a done a great job on these steak knives. They do have a online class on how to sharpen all knives properly if anyone is interested.

I will be straight with u boyz I get a lot of really nice chefs knives down at the Thrift store...Henckels, Wushoff, Dexter, Victornix etc for that buck or two price. Last week a Henckels 5 inch serrated paring knife that sells for $80 on line for $1.40, or a $330 Japanese 5 inch hand forged knife for $1.00 at an estate sale. I even sell what I dont want.

And those dead man shoes guess what I sell those to. So far they have gone to Korea, Japan, Taiwan, Australia, Indonesia, Malaysia, South Africa, Latvia, Ukraine, Germany, Holland, France, UK, and Canada. That is not to mention a whole list of posh addresses in the USA. All I sell are quality shoes, I even have a pair of John Lobbs and Zelli Aligators in inventory right now.

The nice part about it is that I get to keep the really nice stuff that fits. You have seen the lists before...and what is so nice is that it is all so inexpensive. I mean $6 for a $600 Brioni sport shirt X 9 of them. Or the dozen $300 a pair Zanella Italian wool slacks for $6.00 each and not to belabor the point 8 pair of $250 True Religions jeans for $8.00 each. That is not to mention the other numerous high end scores.

I dont see why people shop retail? Maybe that is why I sell stuff to all those posh addresses the people with bank dumpster dive. We live in such a disposable society. But to tell you the truth that is changing.

Thrift stores and to a lesser extent, estate sales are good places to pick up this sort of stuff.
