dietary fiber.
been kinda doing an experiment.
going full vegetarian all week. steel cut oats for breakfast..with walnuts. big arse kale salad, with all sorts of raw stuff for lunch.. beans or tofu at night..cooked kale (that bag of kale from costco is like a king sized pillow!) last night, i baked black beans in water..added salt pepper..roasted a butternut squashed and mixed cubes of it into a pile of beans..added pico di gallo. a big coffee mug full of the stuff would fill you up.. you know what? there is no real hunger. fiber fills you up so much, i am never hungry. i always thought vegetarians were so hungry all the time. not so sure i could do this full time, for ever. but it is kinda nice. let's just say biological functions are all green = go! we have any vegetarians here? my new favorite snack is a corn tortilla with avocado.

I'm gonna admit the entire time I was reading your post I had strange craving for Tri Tip
![]() Over the last few years my enjoyment of a good steak has really diminished. I can't tell you why that is. I do still like carne asada if cut in thin strips with some nice guacamole and salsa side. The wife and I are big into veggies & salads so we share your same enthusiasm for dietary fiber... green = go! I'm not ready to cut out animal products just yet. I'm good with moderation. |

I hope more and more people go totally vegetarian. Maybe it will reduce the price of a decent ribeye.

I eat meat, but there is lots of veggie stuff that's really great. I have plenty of meals that don't necessarily include meat. Avocado, beans, lentils, lots of yummy stuff. Indians make lots of REALLY yummy vegetarian stuff.
As you've found, you can get plenty full on meatless food. Also, getting all of that fiber is great for your cholesterol.

I'm a die hard meat eater & have been all my life. Having said that, like JavaBrewer I've found myself eating less and less meat in the last several years. I realized that when my wife commented one day that I didn't eat much meat. When I thought about it I realized my meat consumption had gone way,way down. I still enjoy a tasty chunk, but things like steak usually seem just too fibrous, slightly tough, and not all that tasty anymore. I don't know if we don't concentrate on buying high enough quality or not. I only buy choice grade at the least, but like everything else in the world, what is "USDA Choice" now may actually be the "USDA Good" of past times. EVERYTHING for consumer consumption now days is actually grades lower than in the past.

We normally do not eat big slab of meat all that much. We have s steak about once every 6 months or a year. When we do, it is so damn good. That said, we cut our meat into thin strips and normally have it with our salad, chicken usually. I am tired of salads, and have never been a big fan, but gotta eat your veggies.

I was for 13 years. Wish I still was. Avocado and tortilla or pita was a fave snack too. Or sticky rice with some spicy dipping sauce. Good humus and pita is also good. Homemade falafel I love. Damn I'm hungry

I've been vegetarian (though not vegan) for 25 years. I really wish the world would go that way. It makes so much more sense but I realize conventions are hard to overcome and it takes time for change to happen.

I think the recommended value for men is something like 38 grams. Something that I've read or maybe my Dr said that 50-60 grams is better. I started taking niacin and eating lots of fiber and drastically reduced my sugar intake and dropped my cholesterol from 240ish to 164. My LDL went from 190 down to 98.

I got most of it from food, beans, lentils, hummus, etc.... In the morning I would down one of these fiber cocktails.
Cocktail Fiber for Gastroenterology Treatments by Jackson (JFC) I think cutting the sugar down and taking 2000 mg of niacin a day also played a big part.

Niacin can boost 'good' cholesterol - Mayo Clinic
Of course, I made 3 major changes at the same time, so I'm not sure how much if any of that was the niacin. More fiber and less sugar are both supposed to also help reduce the amount of cholesterol.
