Do you have one of those fancy wire stretchers?

Cat 5 will work, you may want to consider optically isolating the underground wire from your equipment if you get a lot of lightning strikes, or a nearby strike may take out your equipment.

Or switch to a VOIP phone, run fiber between the buildings, and plug your phone into any network jack.
