Interesting vid on Carbon Steel knives

I thought this was interesting, but what I thought was most telling was that they seemed to use the edge that the knives came with (which is, I'm sure, how 98% of the public uses a knife), but is not necessarily how many of us would use them.



Another interesting knife video with, I think, more useful information.

I have 3 Kramer Zwilling carbons and a couple of those Victorinox stainless in our commercial kitchen that does grab and go vegan meals. I can get the Kramers sharp enough that some of the hired help are afraid to use them. The V - not so much - there is a huge difference. The Kramer is amazing.

What do you mean "use the edge it came with"?
How else can you use a knife?

You resharpen it to the edge and angle you like instead of the factory angle.

I do it with our paring knives and such.

Oh, we have an old carbon steel knife and you can shave off 1/32nd of an inch of paper at a time, all day long. Just don't put it in the dishwasher.

i sold all my vintage carbon steel knives. i do still have a veggie cleaver. sharp has heck.

i am not liking what they do to certain veggies..like red onions, or pineapple. the reaction affects color and i can sometimes smell it. weird.

We have a ceramic for the acidic/pungent stuff.

We mostly use it for meat.

I'm shocked. I thought you were a convert with the master collection, but now I hear that you've sold them all? Where was the sad thread of getting rid of them?

Declutter. Have you seen the "Minimalism" video on Netflix about the Minimalists which are two guys that have written books and travel the country promoting them? It is pretty interesting.
