Pancakes
I didn’t grow up eating them. I like them now. But I still rarely have them for breakfast.
Just saw an IHOP commercial. Double vanilla pancakes. Comes with vanilla ice cream. This is dessert! I don’t think I could oreder this up. I bet it’s good tho. Except it cools down the cakes. ![]() ![]()

When I went to Guadalajara to install some Oracle software for the Mexican PGR I found they are called "flapjacks" and they have them at lunch time. At home we have them 2 or 3 times a month since my wife bought one of those silicone things that sit in the pan and make a bunch of small pancakes. It really does work and she adds fruit or other things to make them interesting.

I like making pancakes using yeast. With quick acting yeast you have to let them rise for 30 minutes. The yeast flavor makes them something very different from regular pancakes.

Growing up, my German grandmother made them at least 6 inches in diameter and we spread brown sugar over them and rolled them up. I still like them that way.

Weekend breakfast in our house both growing up and now.
Planning on buttermilk pancakes tomorrow morning. Lately we switched from Bisquick to Trader Joe’s mix for quick and easy pancakes. Wife can’t stand sweet syrup so she does melted butter. My son and I like natural maple 🍁 syrup. Occasionally we’ll make sourdough pancakes. Fruit toppings are always a plus. Blueberries and strawberries are favorites. |

I resurrected my mom's old hotplate that she had got as a wedding present back in the early '50s. So I use that for making pancakes. I have them maybe once a month on a weekend day to celebrate it being a weekend

Fry a couple pieces of bacon. Mix up some cornmeal pancake batter and fry a cornmeal pancake in the bacon grease. Butter and maple syrup on top. I can eat ONE.
Place near here called the Clifton Mill serves an order of pancakes consisting of one plain, one buckwheat, and one cornmeal, each 10" in diameter and half an inch thick. I can't even look at them. Cracker Barrel has an excellent pecan pancake, great with maple syrup. Again, I can eat ONE. Fruit on pancakes is just wrong.

Learned to make pancakes when very young.
Always white flour, and sifted at that. Corn meal was for corn bread not pancakes. Always put just a little vanilla in them (Grandma's secret, couldn't event let Mom know). For my 6th birthday Grandma gave me a whisk to make better pancakes. If we had pancakes, I was the one that mixed up the batter and cooked them. None of the pancakes I get anywhere match my good old home made pancakes. If out somewhere usually get waffles, a couple sides of bacon and a ton of butter. Wash em down with ice cold milk. Their pancakes are too smooshy and fall apart when you add a little syrup and butter. When got a little older and adventurous culinary wise added things like bacon or balogna as I panned them to cook. One of my brothers wouldn't eat pancakes unless I made them.

When I was a kid, my dad saved the bacon fat and put it in the pancakes. My mom made doughnuts in my grandmother's enameled cast iron pot, and used lard to fry them.
I'm pretty sure they would still taste as good as I remember them. I still have pancakes once in a while. But I haven't had a decent doughnut for quite a while. |

A great trick to delight the kids: suck up a bit of batter in a small plastic syringe...then squirt this onto a hot griddle in the shape of a smiley-face (or whatever) and let it cook till quite brown - then spoon batter over this, let cook some more and flip as usual. Result...a smiley-faced pancake!

We always filtered the bacon grease thru some cheese cloth into a jar we kept in the fridge. That was what you used to put in the pans to cook with.
Had an Aunte that lived on a farm and cooked everything in lard she rendered. The best ever dinner rolls in the world.

I make them for my girls just about every weekend. I use condiment squeeze bottles to make animal shapes at request. Chocolate chips are a hit. Made this one the other day...

When I was about 10 my brother and I made pancakes for breakfast for my parents. It was either father's day or April fools day, I can't remember which.
We cut circles out of an old tee shirt, put some batter in the pan, laid in the tee shirt material, and covered it with more batter. Bets pancakes ever! ![]()
