What to look for, what to ask for in a getting a repaint?

All,
I have a Sunroof coupe 1967-912 second repray in the original paint color of Aga Blue-It looks tired up close and the second respray done 20-30 years ago was a sloppy job. The car looks tired and I am up for having the taken down to bare metal, a few minor rust spots corrected and painted.

When it comes to paint, what should I be looking at and questions to ask and paint recommendation as well as the type of and application of paint.

I am NOT doing this myself and I am sourcing this out. I am looking at all glass out, engine and tires remain but covered, hood and engine deck lid taken out and painted separately Thanks
