What size copper washers on the banjo fittings? Also, torque?

you do know they sell parts here and you can look up the parts you need
https://www.pelicanparts.com/catalog/SuperCat/0798/POR_0798_FULINJ_pg2.htm#item5 I would go through and find the different sizes of copper and aluminum washers needed for your car, you did not say the year and model BTW, and find a site that sells them perhaps in small bulk quantities and order spares. trust me it nice to have them around when you need them

Go to Porsche’s website and look for link to Porsche Classic. You can download a pdf with all the part numbers for your car. You can copy and paste the part numbers to Pelicans search box.
