Geronimo,
I get that you want to warn others to the perils of aircooled 911 ownership, but unlike facebook groups, most of the guys here are in the "been there, done that" camp and still love our cars, even though we're probably all upside down money wise. All of us have had a moment with our cars where we had to make the choice. Keep spending or get off the ride and cash in our tokens. Unfortunately, you never really had any fun to begin with as it seems like your car was pretty tired when you bought it. Actually, I'm surprised there's not more people like yourself that are upset after buying cars sight unseen for peak money on BaT only to find out that the car needed a bunch of work. I watch and comment on the auctions from time to time and try to point out obvious pitfalls, but with most of these you never know without putting hands on the car what condition they are in until after you've wired the money and the truck drops it off. My advise to you is this. If you want off the ride, no worries. Sell it and move on. But if you want to get it back into fighting shape, lean on fellow Pelicans. There's no way my car would be half of what it is without the knowledge and assistance of the dudes on this board. As Kent Olsen said, score a copy of Wayne's book. And you'll need a bunch of parts; put WTB ads out there and I'm sure there's plenty of guys that have NOS stuff collecting dust that they'll sell you at the right price. Head studs are not the end of the world. Get that beast fired up and come driving with us. There's a ton of aircooled dorks in the upper midwest.

As shoooo32 says you can work with what you have. My 3.0L is an 81. Oh some say smaller valves than the 78, so maybe a little less horsepower, how much is how much.
I had my heads modified for twin plugs BUT I only have 9.5:1 pistons so I really didn't have to do that. Twin plugs are probably only good for 10 or less HP but are much better for high compression. Since I do autoxing and track days I wanted an engine that had more low-end torque as that's what pulls you out of the corners not something you have to get over 7000 rpm to get into the power. I had a cam cut, a GT2-102, that has the torque down around 4000 and peak power at 6800. She pulls like a truck. Other than that it's just 40 mm Webers (which I later opened up to 42) and SSI exhausts and a light weight clutch. Sounds like most of that could be done on your current engine in your garage.
