how do I tell whether these have 3.5" bolt spacing?

edit: generally, what's the difference between koni and bilstein struts? do they each accept only one type of insert? (ie.: koni w/ koni, and bilstein w/ bilstein?)

Only way to tell for sure is by measuring between the two caliper mounting holes, between the black lines on the picture.
